Fish Tacos

This recipe comes from my friend Casey (known as Boy-Casey in any situation where Girl-Casey will be...).  He's recently caught wind of the blog and I wanted to send him a nod by posting my favorite dish of his. A summer classic!

Ingredients:
4 4 oz cod filets
1 c panko bread crumbs
1/2 c oil
1 egg

1/2 c mayonnaise
3 limes
2 tsp Old Bay seasoning

1/2 of a white cabbage, chopped
12 hard taco shells

1/2 c shredded mozzarella cheese

Directions:
1. Combine mayo, squeezed limes, and Old Bay seasoning. Let sit in the fridge until you're ready to eat.
2. Chop cabbage and set it aside.
3. Cut cod filets into 1"x1" cubes. Douse in egg wash and bread with panko crumbs.
4. Fry  fish in medium-hot oil for 3-4 minutes on each side.
5. Microwave taco taco shells for 30 seconds or heat in the oven at 300 degrees for 5 minutes.
6. Combine ingredients in a taco shell and top with cheese.



These are the best fish tacos I think I've had. The recipe is such a nice twist on taco night!
