So spicy and delish! Thai noodles are a total comfort food throwback to La Bodega's (Oxford, OH) spicy Thai Noodles for me.
Ingredients:
- 2 chicken breasts, pounded into 1/2" thick
- 1/4 cup chopped peanuts
- 1/4 cup panko bread crumbs
- 1/4 cup peanut sauce (from Asian section of grocery store)
- 1 T mayonaise
- Cayenne/Jabanero sauce
- Japanese Udon noodles
- 1 c frozen stir fry veggies
Directions:
2. While chicken is baking, prepare noodles according to directions.
 3. 10 minutes before chicken is done, saute frozen veggies on med-high heat in olive oil. Once they're hot through, add some additional peanut sauce and stir.
